Fused/Infused Oils:
Baklouti Green Chili
Flavor: hot and fruity, spicy, made from green chilies. Complements: meat, pasta, bread, salads, soup, seafood. Vinegar pairings: blackberry, fig, lavender, lemongrass mint,
mango, peach, raspberry, strawberry, lemon, espresso, pineapple, pomegranate, chocolate, cranberry pear. Ideas: use to sauté, grill, or make salsa, great addition when making North African dishes, use it also for marinade.
Basil
Flavor: garden fresh basil. Complements: bread, pasta, poultry, salads, seafood, vegetables. Vinegar pairings: maple, apricot, blackberry, blueberry, chocolate, peach, lemongrass mint, raspberry, Sicilian lemon, strawberry, 18-year traditional balsamic. Ideas: brush on bread for a grilled caprese salad sandwich, drizzle over chopped fresh tomatoes for bruschetta, combine with any balsamic for a great salad dressing (use a half and half ratio).
Blood orange
Flavor: fresh citrus orange. Complements: bread, dessert, eggs, fruit, poultry, salad, vegetables, seafood. Vinegar pairings: chocolate, cinnamon pear, espresso, fig, oregano, red apple, raspberry, strawberry, lemon, pomegranate, cranberry pear. Ideas: combine with 18-year to marinate seafood, pork, or poultry, use to cook fried or scrambled eggs, use in baking in place of butter or other oils.
Butter
Flavor: natural butter. Complements: baking, breads, eggs, meats, popcorn, rice, seafood, vegetables. Olive oil pairings: cinnamon pear, maple, vanilla, 18-year traditional. Ideas: use in baking in place of butter or whenever you need melted butter, combine with maple and pour over pancakes, drizzle over cooked popcorn, combine with vanilla and cinnamon pear over squash. Cayenne Red Chili

Chipotle
Flavor: smoky and slightly spicy. Complements: beef, pasta, vegetables, bread, pork, poultry. Vinegar pairings: chocolate, espresso, fig, lavender, lemongrass mint, peach, mango, lemon, strawberry, raspberry, tangerine. Ideas: combine with strawberry for a great dressing, combine with lemongrass mint for Asian flavors, combine with chocolate for a great marinade, make salsa by combining with tangerine, chopped onions, tomatoes, and cilantro.
Cilantro/Roasted Onion
Made with perfectly blended flavors of roasted, sweet cipollini onions and cilantro. Wonderful with sautéed vegetables, great for marinade for meat, fish, and poultry. Pairing: honey ginger vinegar.
Garlic
Our Garlic Olive oil (made from UP certified Extra Virgin Olive oil) is redolent with a pungent flavor of fresh garlic. This versatile, heart-healthy oil can be used for sauteing, roasting, grilling, drizzling on salads, vegetables, in marinades and in baked goods.Particularly delightful as a replacement for butter over pasta, baked potatoes, rice or mashed potatoes. Leek
A high concentration of fresh cut leek cold fused with early green Koroneiki olives is really the only way to preserve the full flavor of both the leek and the Koroneiki. This fused herb olive oil is robust and highly aromatic with a sweet oniony flavor and savory garlic notes. Perfect with poultry or served on a cheese board with prosciutto and bread. Spectacular drizzled over soup, sautéed vegetables and over roasted potatoes.
Lemon

Madegascar Black Pepper
Spicy and floral with notes of fresh, ground peppercorn and a lingering, tingly Szechuan peppercorn finish. Great for marinades, dressings, aioli, sautéing and over ice cream. Try it in a cream based dish, or in a salad for a nice peppery zing. Amazing on popcorn, with creamy pasta and seafood. Create that amazing peppercorn flavor in your favorite dishes without having to use fresh peppercorns! Savory notes of smoky olive wood are infused with the highest quality, fresh extra virgin olive oil to make our Olive Wood Smoked Olive Oil. Our smoked olive oil is all natural with no artificial ingredients, preservatives or refined carrier oils! The flavor of olive wood smoke is close to that of oak wood smoke.In Andalusia, Spain, olive wood is commonly used for grilling fish, poultry, meats, and vegetables.Use in potato salad, marinades, over poultry, in sauces such as BBQ sauce, brushed on grilled meats, with vegetables, and even pasta. Pairs well with Sicilian Lemon White Balsamic, Pomegranate Balsamic, Neapolitan Herb Balsamic, and Jalapeno White Balsamic.
Persian lime

Arbequina (Mild Intensity)
Arbequina displays a nice, pungent finish. Notes include savory artichoke and fresh cut grass
with lingering spiciness.
Arbosana (Medium Intensity)
This complex Arbosana is floral & fruity with a creamy mouth feel and an incredible nose. Flavor notes are layered and include green almond, savory herb, banana & apple. Medium intensity and very balanced with a nice pepper finish.
Biancolilla (Medium Intensity)
Native to Sicily and relatively unknown, the Biancolilla has lingering pungency and very little bitterness. This creamy oil has vegetal notes of artichoke, savory herb and almond. A complex, beautiful example of this variety.
Chiquitita (Mild Intensity)
A rare example of a Spanish varietal that has been around since 1991. This newly discovered cultivar is a natural cross between the iconic Spanish Picual and Arbequina varieties. Our first harvest and example of this rare varietal this year is produced in Portugal and impresses the palate with its delicate flavours. Great with any salad, over fish, and any type of vegetable.
Coratina (Robust Intensity) 
Incredible quality composition including high polyphenol antioxidant content. This healthy choice boasts big pepper & green herbaceous notes of green banana & green apple peel. Healthy choice and ideal for cooking and consuming for its health benefits.
Frantoio-Leccino (Mild Intensity)
Frantoio - Leccino blend of two classic Italian varietals creates a wonderfully versatile olive oil with a balanced flavour profile that is appreciated by many palates. Frantoio - Leccino blend displays a creamy, malty center, along with notes of green grass, savory herb, wildflowers & green apple. It has high fruitiness scores with little bitterness, ample pungency, and a slightly sweet finish.
Hojiblanca (Robust Intensity)
This artisan, single cultivar, robust olive oil will amaze and astound those who have never had the pleasure of experiencing great Spanish olive oil. Extremely durable and best for applications that require heat. Floral characteristics with a powerful finish.
Koroneiki (Robust Intensity)
The Koroneiki is a robust fruit, originally hailing from Greece. It has a fruity nose and a strong, peppery finish, characterized by aromas of fresh grass and artichokes. The aromatic flavor elicits words like herbaceous, green tea, fruity and ripe banana. Great as a finishing oil. Mix with fresh dill, tarragon and ground white pepper and top over grilled salmon.
Picual (Robust Intensity)
Buttery Taste with a Peppery Kick... Like many Spanish olive oils, the Picual has a medium body, smooth texture, and sweet, buttery taste, but it finishes with a peppery kick that gives it an extra layer of flavor. It is an excellent choice for use as an everyday olive oil.

Kalamata
Kalamata has savory vegetable notes of asparagus and artichoke with an immediate spiciness on the front and a lingering Szechuan peppercorn finish.
Roasted Japanese Sesame Oil
Our Japanese dark toasted sesame oil is made from high quality sesame seeds roasted slowly under low temperature, and then pressed in small batches in Japan in the traditional style. It has tremendous depth of flavor and mouth-feel.
Use with vegetables, in stir fry, baking, marinades, grilled meats, poultry, baking, hummus, dressings and spreads. Try paired with the Honey Ginger White Balsamic, Grapefruit White Balsamic, Honey Serrano Vinegar, or Sicilian Lemon White Balsamic.

White Truffle Oil

Makes a great finishing oil for many Mediterranean dishes, in mashed potatoes or try it drizzled on popcorn! It also makes an amazing aioli. A little goes a long way, so use sparingly!
Denissimo Dark Balsamic Vinegar
Our Denissimo is made from Trebbiano grape must which is naturally caramelized and cooked down to an even greater extent, and aged for EVEN longer in the traditional “Batteria” of Modena.  Our exclusive “Denissimo” contains less than 1% barrel aged Italian red wine vinegar for pro-biotic effect, and slowly ages in five different casks comprised of mulberry, ash, oak, juniper, and cherry wood.
