Oil Pairings: arbequina, basil, chipotle, garlic, harissa, Koroneiki, lemon, Persian lime, walnut, sage and mushroom. Blackberry Ginger

Flavor: sweet blackberries with a hint of ginger. Black Cherry

Made with the traditional balsamic vinegar and natural black cherry flavor, then blended together for a unique taste. This balsamic is delicious on fruits, ice cream, and on mixed greens. It can also be used as a great marinade for chicken or pork.

Our Aged Balsamic is naturally infused with floral, sweet, blackcurrant. This rich, unique balsamic condimento is tart and amazingly complex. Pair with pungent salty cheeses, use in salads, over yogurt or to dress fresh fruit salad. This full flavor profile makes it an excellent choice drizzled sparingly over Spring Mix, and greens. Best with light to medium EVOO, it will complement Feta cheese, red onions, orange wedges, and cucumbers. Pre-glaze lamb, beef, pork roasts and chops to create a beautiful caramelized surface. Try it on ice cream with fresh berries, or drizzle over shaved ice as a special treat.


Flavor: sweet fresh wild blueberries. Complements:   fruit, meat, dessert, pork, poultry, salad. Oil pairings: basil, harissa, lemon, Persian lime, Tuscan herb, roasted walnut. Cara Cara Orange Vanilla

Flavor: creamy, sultry, and made with pure Madagascar vanilla and the bright citrus of Cara cara oranges. It truly delights the senses. Uses: drizzle over a fruit salad, use with chocolates, in sparkling water, or mix with yogurt. You can even put it over your ice cream. Use this heart healthy combination over oatmeal, cooked whole grain cereal, or pancakes. Pairings: Koroneiki EVOO, Persian lime olive oil, basil olive oil, and butter olive oil.

Cascadian Wild Raspberry White

Flavor: Juicy, tart raspberry and luscious white balsamic come together in this bright, versatile infused balsamic.

Use it in shrubs, mixed cocktails, as glaze or make a marinade for poultry, in wilted spinach salad, over fresh cut fruit, to glaze salmon and much, much more.

Pairs well with lemon olive oil, orange olive oil, lime oil, gremolata olive oil, garlic olive oil, baklouti olive oil, any UP extra virgin olive oil.

Cinnamon Pear

Flavor: rich, sweet, cinnamon with hints of pear.  Complements: pork, salad, seafood, dessert, dairy, oatmeal, fruit.    Oil pairings: blood orange, butter, chipotle, garlic, Persian lime, harissa, walnut, sage and wild mushroom. Ideas: drizzle on yogurt, ice cream, oatmeal, apple crisp, caramel apples, or pears, top salads, combine with blood orange for a salad dressing on spinach or arugula salad with fresh berries, and finish with walnut oil, Mandarin oranges, and feta cheese.


Flavor: rich creamy coconut. Complements: soup, seafood, fruit, pork, vegetables, and poultry. Oil pairings: garlic, harissa, Persian lime, herbs de Provence. Ideas: caramelize baby carrots, combine with garlic for great Thai flavoring, sauté shrimp in Persian lime, finish with a drizzle of coconut, drizzle a little in a mimosa.

Comice Pear

Flavor: Comice pears are succulent, buttery and exceptionally sweet. Our French-style Comice pear white balsamic is aromatic, slightly tart, sweet and delicious. It makes an impressive glaze or marinade for veggies, pork, squash, poultry and roasted apples.

Cranberry Pear white balsamic 

Flavor: clean, crisp, and very tart.   It boasts a deep rose blush and has an amazingly fruity, complex bouquet. Can be used to dress fruits and vegetables, as a marinade or glaze for poultry, or even as a mix with gelatin for a fruit aspic or mixed drink.

Denissimo Premium 

Our Denissimo is made from Trebbiano grape must which is naturally caramelized and cooked down to an even greater extent, and aged for EVEN longer in the traditional "Batteria" od Modena. Our exclusive "Denissimo" contains less than 1% barrel aged Italian red wine vinegar for pro-biotic effect, and slowly ages in five different casks comprised of mulberry, ash, oak, juniper, and cherry wood. This exceedingly rare 1.36 density balsamic is extremely complex featuring flavor notes of cherry wood, dried fruits, raisins, figs, with hints of dark chocolate and malt. Gravenstein Apple white balsalmic

The Gravenstein Apple is an incredibly hard to find varietal due to the difficulty farmers have cultivating it. In addition to contending with a very finicky tree, it’s also not an apple that travels or stores well so it is best enjoyed during its relatively short season and isn’t typically shipped far. It’s grown in pockets up the coast of Northern California and prized for its amazing ambrosia perfume, and crisp, sweet-tart cream colored flesh. Our Gravenstein Apple White Balsamic marries the complexity of the Gravenstein’s larger than life flavor with our well balanced Ultra Premium White Balsamic Vinegar from Italy for a delectable culinary symphony.

Ginger and Honey

Flavor: light and bright with intense ginger and subtle honey. Complements: fruit, pork, beverage, poultry, seafood, salad. Ideas: great on fruit salads or green salads, add to bottled or sparkling water for refreshing flavor, flavor rice, use in stir-fry dishes, marinate cucumbers or water chestnuts and add to a salad,  or deglaze a pan after searing seafood with any EVOO above and top with glaze.


Flavor: grapefruit white balsamic vinegar sparkles with crisp clean flavors. It has a perfect balance of acidity and natural sweetness. Try this amazing balsamic dressings, paired with Herbs de Provence, Lemon and Blood orange oils. Drizzle it over greens, fennel, and fruit salads, or add an acidic punch to a chicken or fish marinade. For something sweeter, mix it in summer cocktails or use it over berries for dessert.


Flavor: zesty jalapeno peppers with a touch of heat. Complements: meat, poultry, rice, pork, vegetables, salad. Key Lime

Flavor: Native to Southeast Asia, the key lime is smaller with a more tart flavor than Persian limes. This white balsamic pairs exceptionally well with our jalapeño olive oil as a salad dressing or marinade for chicken or seafood. Key Lime White Balsamic makes an excellent reduction to accompany cheesecakes, fresh fruit tarts or fruit salads. Pairs with: Blood Orange, Milanese Gremolata, or Garlic Olive Oils


Flavor: fresh aromatic lavender, sweet and subtle tartness. Complements: chicken, potatoes, salads. It is excellent when used in baking. Pairings: garlic oil, butter oil and chocolate balsamic, herbs de Provence, green chili oil, rosemary oil, lemon oil, almond and walnut oil.

Lemongrass Mint

Flavor: natural Thai lemongrass combined with fresh mint. Complements: fruit, pasta, dipping sauce, rice, salad, seafood. Oil pairings: basil, chipotle, garlic, gremolata, harissa, Persian lime. Ideas: combine in sparkling water for a refreshing thirst quencher, mix with rum for an out-of-this-world mojito, add to diced fresh hot Thai chiles and harissa for a taste explosion on meats, pasta, and rice, combine with garlic or Persian lime for a zesty salad dressing.

Neapolitan Herb dark balsamic

 Zesty and savory, our Neapolitan Herb Dark Balsamic has just the right amount of

acidity to shine in a multitude of culinary applications. Made from traditional herbs long used in Neapolitan cuisine including, rosemary, marjoram, thyme, garlic, and sage. It will boost your next salad, marinade for poultry, seafood & steak or take your BBQ to the next level. Pairs well with Garlic, Blood Orange, Fused Lemon, Persian Lime or Tuscan Olive oils.

Passion Fruit

Flavor: This aged white balsamic vinegar is infused with fresh whole fruit passionfruit for a wonderful sweet and tropical flavor! Passion fruit originates in South America where the juice of this fruit is usually used in cocktails, salads or other culinary applications. It is an utter sensation in Latin American and thus, with our Argentinean heritage decided to bring you a little taste of South America right to your kitchen! The flavor is slightly sweet with tropical notes similar to mango and a light tang at the end.
Great for marinating seafood like salmon, shrimp, scallops or even any kind of kabobs. We also love this vinegar for salads of all kinds!
Pairings: Persian Lime, Eureka Lemon, Blood or any unflavored extra virgin olive oil!


Flavor: light sweet flavor of fresh peaches. Complements: beverages, pork, fruit, poultry, seafood, salad. Oil pairings: Arbequina, basil, chipotle, garlic, harissa, Koroneiiki, lemon, sage and mushroom. Ideas: combine with any EVOO for a great salad dressing, combine with garlic or a spicy EVOO to marinate pork or poultry, marinate sliced cucumbers, top with sea salt and fresh pepper. Also, add to sparkling mineral water for a thirst quencher.


Our pineapple balsamic is sweet and tart with the aroma of fresh cut, ripe pineapples. This balsamic is the perfect complement to fruit salads and fresh berries. It adds great flavor without discoloring your salad greens. Try mixing it with our soy sauce, sesame oil, or ginger and garlic olive oil for a great marinade.

Pinot Voir Red Wine

Made from red or white wine, wine vinegar is the most commonly used vinegar in Mediterranean countries and central Europe. As with wine, better quality wine vinegars are matured in wood for up to twenty years and exhibit complex, mellow flavors. Wine vinegar usually has lower acidity than white or cider vinegars. Use this delicious vinegar in dressings, sauces, or marinades. We recommend brushing it on steak or drizzling it over fresh avocado slices. Pairs well with Garlic, Olive Wood Smoked, Baklouti or any of our citrus olive oils. Key Lime can also be paired with Almond or Sesame oils.


Flavor: medium tart pomegranate. Complements: fruit, lamb, duck, meat, poultry, salad. Ideas: combine with basil or gremolata to marinate lamb or duck. Reduce in saucepan and drizzle over strawberries or duck. Caramelize red onions, combine with Persian lime, lemon, or basil, serve over salad greens topped with nuts, feta cheese, and caramelized red onions.


This white balsamic is made with the yellow fruit from the Asian tree. The fruit is used to make jam or jelly. Pair this balsamic with garlic olive oil or any plain EVOO.


Flavor: mildly tart, fresh raspberries. Complements: pork, poultry, fruit, salad, vegetables. Oil pairings: basil, blood orange, chipotle, harissa, lemon, Persian lime, herbs de Provence, and walnut. Ideas: reduce and use as a syrup on pancakes, waffles, and French toast, combine with herbs de Provence and drizzle over fruit skewers, reduce as a glaze, add oregano, grape jelly, and black pepper, combine with basil and drizzle over baby greens with goat cheese and toasted pecans.

Red Apple

Flavor: sweet apple. Complements: pork, salad, vegetables, fruit, poultry. Oil pairings: blood orange, garlic, Koroneiki, lemon, Persian lime, Picual, sage and mushroom. Ideas: drizzle on sweet potatoes and roast, drizzle on apple crisp, combine with sage and mushroom to baste and inject into turkey, combine with garlic and walnut for salad dressing.

Red Wine Vinegar

Fine wine vinegars come from fine wines, which is why some of the finest gourmet vinegars come from  wine-producing regions of France and Italy. Like wine, wine vinegars are aged in barrels, preferably oak, which infuse these vinegars with some of the tannins of wine. Wine vinegars are typically more mellow than regular vinegars, with a more complex bouquet infused with the qualities of the terroir where they originate. Use fine red wine vinegars with subtle oils, as to not overpower the flavors of the vinegar.

Serrano Honey

Flavor: tart, sweet, spicy, 100% honey flavored with Serrano peppers. Complements: fruit, pasta, poultry, salad, seafood. Olive oil pairings: blood orange, chipotle, garlic, harissa, lemon, Persian lime. Ideas: drizzle on caprese salad or in lettuce wraps, roast sweet potatoes, add to dressings for leafy green potato, pasta or rice salads, toss with sliced strawberries, use in Bloody Marys.

Sicilian Lemon

Flavor: fresh, bright, and slightly sweet lemon. Complements: pasta, pork, poultry, seafood, and fruit. Oil pairings: basil, blood orange, chipotle, Tuscan herb, garlic, gremolata, harissa, herbs de Provence, Persian lime, sage and mushroom. Ideas: combine with basil and drizzle over pasta, add fresh tomatoes and grated cheese and drizzle over steamed vegetables, add to sparkling water for a refreshing thirst quencher.

Flavor: classically sweet. Complements: dairy, fruit, meat, pork, pasta, seafood, soup, poultry, bread, dessert. Oil pairings: any flavor-infused olive oil or extra virgin olive oil. Ideas: drizzle over steamed or roasted vegetables, drizzle on bruschetta or caprese salad, drizzle over fruit or ice cream, combine with a spicy EVOO for grilling, combine with any EVOO for bread dipping.  

Vanilla Bean

Flavor: Sultry, fragrant Tahitian vanilla beans are married with our aged balsamic condimento. Its sweet, creamy flavor complements dairy, desserts, fruits, salads and seafood. The resulting collaboration in intoxicating as it is exotic. Try with fresh strawberries or drizzled over a warm brownie or ice cream.
