Baklouti green chili

Flavor: hot and fruity, spicy, made from green chilies. Complements: meat, pasta, bread, salads, soup, seafood. Vinegar pairings: blackberry, fig, lavender, lemongrass mint, mango, peach, raspberry, strawberry, lemon, espresso, pineapple, pomegranate, chocolate, cranberry pear. Ideas: use to sauté, grill, or make salsa, great addition when making North African dishes, use it also for marinade.

Basil

Flavor: garden fresh basil. Complements: bread, pasta, poultry, salads, seafood, vegetables. Vinegar pairings: maple, apricot, blackberry, blueberry, chocolate, peach, lemongrass mint, raspberry, Sicilian lemon, strawberry, 18-year traditional balsamic. Ideas: brush on bread for a grilled caprese salad sandwich, drizzle over chopped fresh tomatoes for bruschetta, combine with any balsamic for a great salad dressing (use a half and half ratio).

Blood orange

Flavor: fresh citrus orange. Complements: bread, dessert, eggs, fruit, poultry, salad, vegetables, seafood. Vinegar pairings: chocolate, cinnamon pear, espresso, fig, oregano, red apple, raspberry, strawberry, lemon, pomegranate, cranberry pear. Ideas: combine with 18-year to marinate seafood, pork, or poultry, use to cook fried or scrambled eggs, use in baking in place of butter or other oils.

Butter

Flavor: natural butter. Complements: baking, breads, eggs, meats, popcorn, rice, seafood, vegetables. Olive oil pairings: cinnamon pear, maple, vanilla, 18-year traditional. Ideas: use in baking in place of butter or whenever you need melted butter, combine with maple and pour over pancakes, drizzle over cooked popcorn, combine with vanilla and cinnamon pear over squash. Recommended for all — vegetarian, vegan, or people with dairy allergies or intolerances.

Cayenne chili

Flavor: infused with whole ripe cayenne chilies. Complements: bread, meat, pasta, pork, rice, salads, seafood, and vegetables. Pairings: apricot, blueberry, cinnamon pear, espresso, grapefruit, jalapeno, mango, maple, peach, Sicilian lemon, raspberry, strawberry, chocolate, and 18-year traditional. Ideas: sauté or grill vegetables, use with any of the above vinegars for a marinade, combine with strawberry or blueberry for an extra sweet and spicy dressing.

Chipotle

Flavor: smoky and slightly spicy. Complements: beef, pasta, vegetables, bread, pork, poultry. Vinegar pairings: chocolate, espresso, fig, lavender, lemongrass mint, peach, mango, lemon, strawberry, raspberry, tangerine. Ideas: combine with strawberry for a great dressing, combine with lemongrass mint for Asian flavors, combine with chocolate for a great marinade, make salsa by combining with tangerine, chopped onions, tomatoes, and cilantro.

Cilantro and roasted onion

Made with perfectly blended flavors of roasted, sweet cipollini onions and cilantro. Wonderful with sautéed vegetables, great for marinade for meat, fish, and poultry. Pairing: honey ginger vinegar.

Garlic

Our Garlic Olive oil (made from UP certified Extra Virgin Olive oil) is redolent with a pungent flavor of fresh garlic.  This versatile, heart-healthy oil can be used for sauteing, roasting, grilling, drizzling on salads, vegetables, in marinades and in baked goods.Particularly delightful as a replacement for butter over pasta, baked potatoes, rice or mashed potatoes. Try drizzling on steaks before grilling, or simply for bread dipping.Pairs well with Red Apple, Peach, Lemongrass Mint, Espresso, Mango, Sicilian Lemon or 18 yr. Traditional Balsamics.

Gremolata

Flavor: lemon zest, Italian flat leaf parsley, minced garlic, and a hint of mint. Complements: meat, pasta, bread, pork, poultry, vegetables, seafood. Vinegar pairings: maple, lemongrass mint, oregano, peach, raspberry, pomegranate, Sicilian lemon, 18-year traditional. Ideas: serve with veal or other slow braised dishes for a zip of flavor, drizzle over wedge potatoes and roast, toss with pasta, tomatoes, and cheese.

Harissa

Flavor: roasted chili peppers with hints of cumin, garlic, cinnamon, and caraway. Complements: meat, seafood, poultry, bread, eggs, vegetables. Vinegar pairings: blueberry, chocolate, cinnamon pear, lemongrass mint, pomegranate, mango, peach, coconut, strawberry, tangerine, espresso, cranberry pear. Ideas: use to cook scrambled or fried eggs, combine with blueberry or strawberry for a sweet spicy and savory dressing, marinate with any balsamic above for grilling.

Herbs de Provence

Flavor: light and savory with hints of thyme, lavender, rosemary, fennel, and bay leaf. Complements: bread, lamb, meat, pasta, poultry, rice, vegetables, seafood. Vinegar pairings: blackberry, coconut, lavender, pineapple, raspberry, Sicilian, lemon, 18-year traditional. Ideas: combine with tangerine to marinate poultry and pork, combine with lavender to marinate lamb, use to roast potatoes or vegetables, cook rice, dip bread, or drizzle on pizza.

Eureka green limonato (IOO133)

Whole fruit fused agrumato method. This is made by crushing very green olives with young green eureka lemons in November. The result is an incredibly complex, pungent fusion. By picking certain eureka lemons at the precise moment for maximum lemon aroma and flavor, we were able to achieve a powerfully fragrant oil. Super concentrated, it is the only example of its kind in the world, and a little bit goes a long way. This agrumato citrus oil is unique, and pairs amazingly with the peach white balsamic. It's all natural, with no artificial flavors or additional ingredients.

Olive Wood Smoked Olive Oil
Savory notes of smoky olive wood are infused with the highest quality, fresh extra virgin olive oil to make our Olive Wood Smoked Olive Oil. Our smoked olive oil is all natural with no artificial ingredients, preservatives or refined carrier oils! The flavor of olive wood smoke is close to that of oak wood smoke.
In Andalusia, Spain, olive wood is commonly used for grilling fish, poultry, meats, and vegetables.
Use in potato salad, marinades, over poultry, in sauces such as BBQ sauce, brushed on grilled meats, with vegetables, and even pasta. 
Pairs well with Sicilian Lemon White Balsamic, Pomegranate Balsamic, Neapolitan Herb Balsamic, and Jalapeno White Balsamic.

Persian lime

Flavor: fresh lime. Complements: desserts, bread, popcorn, salad, seafood, vegetables. Ideas: combine with coconut, ginger, and honey to marinate seafood or poultry, combine with any of the balsamics above to grill fruit or create great salad dressings.

Rosemary

Flavor: fresh wild rosemary. Complements: vegetables, pasta, poultry, salads, bread, meat. Vinegar pairings: black current, cranberry pear, lavender oregano, lemon, 18-year balsamic. Ideas: roast or grill vegetables or meats, brush on a baguette before toasting, add to any dough used in holiday baking, mix with a white balsamic for a great salad dressing.

Sage and wild mushroom

Flavor: savory sage with hints of shiitake and morel mushrooms. Complements: eggs, pasta, pork, vegetables, bread, poultry. Vinegar pairings: blackberry, cranberry pear, maple, oregano, peach, red apple, lemon, 18-year balsamic. Ideas: use in scrambled eggs and frittatas, drizzle over noodles and smoked gouda cheese, use in place of butter for mashed potatoes or sweet potatoes, combine with red apple to inject and baste poultry.

Tuscan Herb

Flavor: full bodied blend of rosemary, sage, oregano, and garlic. Complements: bread, meat, rice, risotto, poultry, salad, pasta, seafood, vegetables. Ideas: drizzle on pasta with prosciutto and caramelized onions. Ideas: combine with lavender for a sweet dressing, great for sautéing, roasting, or grilling vegetables or any type of meat, mix with 18-year and grated cheese for bread dipping, brush on bread for grilled sandwiches.

Whole fruit lemon

Fresh citrus lemon. Vinegar pairings: blueberry, chocolate, cinnamon pear, peach, mango, lavender, strawberry, red apple, raspberry. Ideas: combine with any of the vinegars for a salad dressing or to roast vegetables, use to sauté, bake, or grill, use in baking in place of butter or other oils for cakes, muffins, and brownies.

Wild Fern Dill

Can be used for a variety of dishes. Use to dress fresh cucumbers, drizzle over greens, or as a dressing. This olive oil is excellent when paired with the Sicilian lemon balsamic for salmon or any fish.

Arbequina

This creamy California Arbequina is delicate and sweet with notes of green almond and artichoke. Low bitterness and pungency. Clean finish.

Arbosana

Clean, slightly floral & buttery with a nice peppery finish and ample bitterness. Clearly displays savory notes of creamy artichoke. Crushed in late May and representing a smaller lot production, this was the finest example we could find after performing sensory evaluations on dozens of Chilean Arbosanas.

Chiquitita

Originating only very recently in Spain in 1991, this new cultivar is a cross between the iconic Spanish Picual and Arbequina varieties. Our example is sweet and delicate and hails from Portugal. Displays a pleasant taste of green almond and olive.

Coratina EVOO

Incredible quality composition including high polyphenol antioxidant content. This healthy choice boasts big pepper & green herbaceous notes of green banana & green apple peel. Healthy choice and ideal for cooking and consuming for its health benefits.

Frantoio/Leccino (Chile)

This always-popular extra virgin olive oil is a blend of two delicous Italian olive varietals: the fruity Frantoio and the green, herbal Leccino. These two olives combine to create a creamy, malty center with notes of green grass, wildflowers and green apple with a delightful peppery finish. It has a high fruitiness, which paired with its lover bitterness makes this oil ideal for finishing, dressings, and salads.

Hojiblanca EVOO

The fragrant gem was freshly pressed by one of the top olive oil producers in the world. This lovely Spanish oil wins multiple prestigious awards year in and year out! Extremely green and floral, with layered complexity and diverse tasting notes that continue to develop well after the last sip! Creamy and green, with a hint of bitter almond! Intense floral notes, lead to a lasting peppery burn! We invite you to enjoy this beautiful oil while it's in the prime of its life!

Koroneiki Extra Virgin Oil

The koroneiki is a robust fruit, originally hailing from Greece. It has a fruity nose and a strong, peppery finish, characterized by aromas of fresh grass and artichokes. The aromatic flavor elicits words like herbaceous, green tea, fruity and ripe banana. This olive has a very high level of polyphenols (responsible for the scratch in the back of the throat), the chemical substances found in plants that may reduce the risk of heart disease and cancer. Great as a finishing oil. Mix with fresh dill, tarragon and ground white pepper and top over grilled salmon.

Pendolino

This rare Tuscan variety is grown in Australia and displays super fruity notes of green apple and citrus! Overall, a very delicate and buttery oil with fruity notes perfect for those who love a mellow oil. A very versatile oil to use with soups, stews, pasta dishes and as a bread dipper.
