White Balsamic Vinegars:
A Premium 
Made with White Trebbiano Grape Must, our White Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena however it is not caramelized. The result is a crisp, tart vinegar with a touch of sweetness. Extremely adaptable, it can be used with any E.V.O.O., as well as with our flavored oils.
Blenheim Apricot
Our Blenheim Apricot White Balsamic Condimento, which is aged up to 12 years, is juicy, fragrant, sweet, slightly tart and simply mouthwatering.  With the enticing flavor of fresh, ripe apricot, it tastes like summer in a bottle. Our recommended applications include:  dressing, vinaigrettes, glaze, reduction, marinade, fruit salad, chicken, or grilling.
Cara Cara Orange Vanilla
This all natural confectionery white balsamic condimento is made from authentic white balsamic aged for up to 12 years in Modena, Italy.  Creamy, sultry, pure Madagascar Vanilla and the bright citrus of Cara Cara Oranges combine to delight

Cranberry Pear

Honey Ginger

Jalapeno
A little sweet with a pleasing amount of heat acidity – Use this to add a spicy kick to your marinades and dressings. Splash a little into ceviche, salsa or add to homemade BBQ sauce!  Lovely tossed with grilled vegetables and brushed onto poultry.
Key Lime
Use our sweet, floral Key Lime White Balsamic in shrubs, marinades, mixed cocktails, pickles, over berries or cut up fruit.  Makes a wonderful glaze or addition to marinades and dressings.  Excellent when mixed with sparkling water for a refreshing, crisp beverage. Ripe Peach
Made with White Trebbiano Grape must, our White Peach Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena but is not
caramelized therefore it retains its white color. The result is a crisp vinegar with a touch of sweetness reminiscent of handcrafted vinegar's of Northern Italy.

Amazingly complex - makes a great addition to salsa, Ceviche, a Bloody Mary & shrimp on the grill. Delicious drizzled over sliced tomatoes and fresh mozzarella cheese. Umeboshi Plum:
If you take a hint of apricot, combine it with the floral notes of golden-ripe Japanese plums, and the luscious, sweet-tart characteristics of our aged white balsamic from Modena Italy. It pairs well with the Persian Lime Olive Oil, Lemon Olive Oil, Garlic Olive Oil, Toasted Sesame Oil, Orange Olive Oil, and Basil Olive Oil.

Black Berry Ginger
Our Blackberry-Ginger Balsamic is wonderfully sweet and pleasingly tart.  It’s redolent with the exotic, spicy flavor of ginger artfully married with rich, ripe juicy blackberry. It makes a fantastic dressing or marinade, use on chicken, fish, over fruit salad, or oatmeal.  It is divine paired with our Persian Lime Olive Oil, Lemon Olive Oil, or any one of our Extra Virgin Olive Oils.
Black Cherry
Rich and sweet, our All Natural Black Cherry Balsamic is made with Ultra Premium Aged Balsamic Vinegar to produce a sweet, rich product that has garnered rave reviews. Enjoy in vinaigrettes, on salads, to glaze meats or poultry, or try pairing with cheese such as Stilton, Chevre or Camembert.

Blueberry
Our luscious blueberry balsamic vinegar is just as amazing over garden salad as it is over fruit salad. When paired with a delicate Extra Virgin Olive Oil such as Arbequina, the intense blueberry flavor will shine. Also fantastic with our Orange or Lemon olive oils. Pairs well with blue and feta cheeses.
Dark Chocolate
This delightful vinegar is spicy and warm, perfect drizzled over fresh fruit and exquisite as a dessert topping. Tasting Notes: It has the unique taste of d’anjou pear, and matches well with many of our sweeter, fruity oils for a delicious marinade or salad dressing.
Elderberry
Tart, rich and sweet, our Elderberry Dark Balsamic is a taste sensation, wit zesty hints of juicy purple elderberry. Use in marinades, shrubs, dressings, glazes, desserts, with fruit, and in baking. It is sensational paired with our Persian Lime Olive Oil, Lemon Olive Oil, or any one of our Extra Virgin Olive Oils.
Espresso
This aged Balsamic Vinegar is amazingly complex, with layers of authentic espresso and dark roasted coffee extract. It makes a fantastic glaze or bar-b-que base for pork, beef or chicken. Beautiful on Italian style deserts with cream or as
a glaze for roasted vegetables. Add a shot to an “affogatto float”, which calls for a tall mug of vanilla gelato scoops covered with coffee.
Lavender
Floral, sweet and slightly herbaceous, our Lavender Balsamic captures the essence of this ancient flower. Pair with chicken, lamb, vegetables, or use in vinaigrettes, over ice cream and with fresh fruits and berries.  Pairs well with Lemon Agrumato Olive Oil, Blood Orange Agrumato Olive Oil, and the Herbes de
Provence Infused Olive Oil.
Maple
We have searched high and low, and it appears that we have created the first of its kind, an Aged Pure Maple Balsamic, using real 100% pure maple produced at a small family farm in Vermont.  This balsamic is outrageously good.  Think pancakes, B-B-Q sauce base, waffles, maple balsamic glazed bacon, pork chops, salmon, glazed ham, ice cream, dressings, marinades, chocolate, cake, fruit, the possibilities are endless. It was made to be used with our butter infused olive oil, California Toasted Almond oil, and Blood Orange Fused (agrumato) olive oil. It works well with any number of Extra Virgin Olive Oils in our collection

Zesty and savory, our Neapolitan Herb Dark Balsamic has just the right amount of acidity to shine in a multitude of culinary applications.  Made from traditional herbs long used in Neapolitan cuisine including rosemary, marjoram, thyme, garlic and sage
Pomegranate
The intense sweet-tart flavor of the pomegranate is a perfect match for hearty meats like lamb and duck. It makes an exciting dressing whisked with your favorite oil, pomegranate seeds, toasted nuts and feta cheese. It adds depth to pan sauces, braised meats or compotes. Raspberry
This thick, rich, perfectly balanced Balsamic Vinegar dazzles with the natural flavor of fresh, ripe raspberries. Red Apple
This balsamic has an enticing aroma and a delicate, sweet apple flavor, fruitier than most balsamic vinegars. It’s a wonderful way of adding aroma and taste to compliment any dish. It adds a refreshing lift to salads, sauces, chutney’s and vegetables. It is amazing drizzled on pork, chicken or fish. Mix equally with our Toasted Almond Oil and shake well, for a knock-out vinaigrette dressing.
Strawberry
Both sour and tart, our Strawberry Balsamic Vinegar is the very embodiment of ripe juicy strawberry and rich smooth aged balsamic. Delightfully versatile, use in marinades, dressings, with spinach salad, on cheese plates, to glaze poultry or
meat, over thick yogurt or premium vanilla ice cream.
18-year Traditional
Our finest grade of aged balsamic condimento from Modena, Italy is produced in the Traditional Style.  It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash. This spectacular density comes naturally without thickeners or added sugar, from a lengthy aging process and cooking in copper kettles.  It is exceedingly rich, complex and dense and pairs beautifully with any olive oil in our collection. 
Vanilla Bean
Sultry, fragrant Tahitian vanilla beans are married with our aged balsamic condimento. The resulting collaboration is intoxicating as it is exotic. Notes: Try with fresh strawberries or drizzled over a warm brownie. Pair with our Fused Blood Orange Olive Oil or our Fused Mandarin Olive Oil.
